This recipe is a regular go-to dinner in the Shared Affair kitchen. It can be whipped up in 15 minutes but is bursting with flavour and always satisfies. For a richer dish half of the olive oil can be sustituted for the same amount of melted butter. We save this for dinner parties as its a lot naughtier but Ohhhh soooo good!

WHAT YOU NEED :

500g Tagliatelle
1kg of prawns (peeled and deviened, tails in tact)
Zest of 2 lemons (reserve lemon to squeeze over later)
1/3 cup of good quality Extra Virgin Olive Oil (plus 2Tbsp for frying)
8 cloves of garlic (crushed)
3 small chillies (finely chopped)
1 bunch of parsley (finely chopped)
1 cup of white wine (we use Pinot Grigio)
Salt and pepper

PREPARATION:

Bring 3L of water to a boil in a large pot. Season well with salt.
Add your pasta and cook until al dente (cooked but still firm to the bite)

Heat 2tbsp of olive oil in a large fry pan and fry of your prawns in 2 batches until they just start to change colour. (They will finish cooking in the sauce)
Deglaze your frypan with white wine and allow to simmer and reduce for 2 minutes then add your olive oil, garlic, chilli and lemon zest and prawns. Cook for a further minute until fragrant. Season well with salt and pepper and squeeze over half a lemon.

Drain your pasta then add to the frypan of sauce with the chopped parsley. Mix well and serve in a large bowl.
